After a brief hiatus from serving up mouthwatering soul cuisine the godfather of soul food, Carl Redding, makes a valiant return to the the shaky soul food scene in Harlem. Chef Redding opened up the highly successful Amy Ruth’s back in 1998, then sold it just short of its ten year anniversary. He opened up another restaurant in New Jersey called Ruthie Mae’s that lasted approximately six months.
Not one to stay out of the kitchen for long, Chef Redding has dusted off his apron and returned to his Harlem roots where he has opened his latest venture, Doc’s.
Doc’s is a scaled down version of the previous restaurants that serves a take-out only menu of Redding’s signature southern favorites, as well as seafood creations like steamed mussels and grilled salmon Caesar salad. Aware of the tough economic times Chef Redding has added a sweet twist to the old formula. Doc’s Recession Rescue Menu serves a family of four a choice of chicken, ribs or fish, plus three sides, biscuits and soda for $24.99. While it still averages out to about $6 per person, it is a great way to enjoy a delicious soul food meal at less than half the cost of eating out in a restaurant.
Perhaps Chef Redding has found the secret recipe for preserving the tradition of soul food in Harlem, until the dire economic tide turns in our favor once again.
